MS‐based analysis is one of the fastest growing and most widely used methods in food analysis. With the advantages of MS, such as high throughput, sensitivity, and accuracy, lipidomics based on MS has emerged as an important method for food lipid analysis, which addresses the molecular complexity of lipids and the wide range of lipid compositions among different food samples.
