How do brix refractometers work?

I am currently using an FJD refractometer, which is available in different models. I think it's an excellent Brix refractometer as it satisfies the Brix test for all fruits and vegetables. Besides, it works well in testing coffee and salt concentration, ensuring accurate refractometer readings. Not only does it have a wide range, but it also has a high-precision label. The accuracy of 0.3% means that the error of each test is tiny, which is difficult for most digital products to achieve.

Brix refers to the concentration of dissolved sugar in a solution. It is widely used in the food industry to accurately measure the sugar content of the products, e.g., fruits, soft drinks, and honey. So how do Brix refractometers work?
