Alpha-Cyclodextrin is a non-reducing cyclic saccharide comprised of six glucose units linked by alpha-1.4 bonds. It is produced by the action of cyclodextrin glucosyl transferase on hydrolysed starch syrups. The cavity of alpha-cyclodextrin is less than beta-cyclodextrin, so it is used to allow formation of inclusion complexes with little molecules. The solubility degree of Alpha-cyclodextrin in water is 14.5 g/100ml @ 25°C, so the situation that needs high solubility of cyclodextrin.

In the food industry, Alfa-cyclodextrin(ACD) can provide a new vegetable selection for stabilizing oil in water emulsion. In addition, it can also enhance the wet foaming and dry foaming effects of protein. When used as a foaming agent, it can produce new mousse desserts without fat or mny other countries.
The European Commission has also confirmed that alpha cyclodextrin has definite health benefits. It has been confirmed by EU experts that eating starch containing alpha cyclodextrin can reduce the rise of postprandial blood glucose. Cyclodextrins have other uses in food manufacturing, such as covering bitterness, stabilizing aroma and improving bioavailability of active ingredients.
