Organic acids are among the most versatile ingredients in the food and beverage industry because of their three main properties: they are soluble, hygroscopic, and have the abilities of buffering and chelation. Due to their wide applications in the food industry as additives and as chemical feedstocks, there is an increasing demand for organic acid production. As organic acids and their salts enable the preservation of feed and silages, they are also effective in reducing bacterial content and maintaining the nutritional value of the feed to guarantee animal performance, as well as improving nutrient digestibility. Organic acids are applied directly into feedstuffs: liquid acids and blends are sprayed onto the feed whereas solid acids and acid salts are added directly or by premix.
